Red Dead - Chilequiles

With news of Red Dead Redemption 2 in the works, it inspired me to create a really simple and delicious meal for one of the best games (I've played) ever.

You ready for a banging Mexican breakfast? Lemme introduce you to Red Dead - Chilequiles! Giving you a little bit of cowboy flair, south of the border!

This recipe is super easy to make and will for sure be a favorite for many any time of day.

YEEHAW!!


Level: Super Noob
Duration: 20 Minutes
Feeds: 1-2 People



The Goods:

-One package of flour tortillas
-Shredded Mexican Cheese
-1 small can "El Pato" hot sauce (yellow can is red hot, green can is salsa verde) you can use any kind
-2 eggs
-Sour Cream
-Olive Oil
-1 White Onion


Tutorial:

Take about half (or a little more) of the tortillas from the package and cut them lengthwise into strips, and crosswise into little chips.

Take about 2 Tablespoons of olive oil and pour into a pan. 

Turn the pan onto medium heat and place the tortilla strips into the pan and fry them until golden brown.

Remove chips and place them on a plate that is lined with a paper towel to soak up the oil.

Chop onion into cubes or strips, (you can use whole onion or half it doesn't matter) and place them in the pan, add a little drizzle of oil if needed.

Cook down the onions until soft and golden.

Add the Eggs and scramble lightly with the onions.

Add the El Pato sauce to the eggs and onions

Add the crispy tortilla chips to the salsa and egg mixture, coat the chips fully.

Add the cheese (however much you like)

Remove pan from heat and plate the spicy goodness.

Add more cheese if you like with a dollop of sour cream.

Green Lantern Pesto Pizza

GREEN LANTERN PESTO PIZZA

Super ridiculously easy and super delicious pizza recipe. For those who aren't afraid to try new things.

Enjoy this recipe, and save the world from evil!
Level: N00b
Duration: 18 Minutes
Serves: 4-6


The Goods:

  • One package of Boboli Pizza Crust
  • One Jar of Pesto Sauce (found in pasta sauce isle or in the refridgerated section near veggies)
  • A box of Feta Cheese or Shredded Mozzarella OR BOTH!
  • Small Carton of Baby Spinach

Tutorial:

Preheat oven to 450 Degrees Fahrenheit
Spread the green pesto sauce all over the pizza crust, leave about 1 to 1/2 inch space from the ends.
Sprinkle Cheese all over
Top with your desired amount of Spinach
Bake in the oven for about 8-10 minutes until cheese and crust is about golden brown.
 Remove from oven
Slice
Enjoy!

Yoshi's Egg Salad Sandwich


Yoshi is just one of my favorite Mario characters!

Hope you like this ridiculously bomb sandwich! Perfect for the summer like weather us folk in CA are having!

**DISCLAIMER: NO UNBORN YOSHI'S WERE HARMED IN THE CREATION OF THIS SANDWICH!** 


Time: 20 Minutes
Level: n00b
Serves: 4


The Goods: 

6 hard-boiled eggs (Check out how to hard-boil eggs from my previous post HERE)
1/4 cup mayonnaise, (Extra if you like, for spreading)
1 teaspoon Dijon or spicy brown mustard
1/2 lemon, juiced
Salt and freshly ground black pepper
1 avocado, halved, peeled, seeded and sliced lengthwise
2 slices of bacon, cooked and crumbled
3 teaspoons finely diced "spiced" onion
1 small jalapeno, diced (Or you can use jarred jalapenos, just chop them up)
½ teaspoon white wine vinegar
Shredded or chopped lettuce
1 tomato cut lengthwise
Potato Chips
Your favorite bread (I recommend getting cheddar jalapeno from the bakery section of the grocery store)

Tutorial:

Cut the dumb eggs in half and separate the white part from the yellow part (yolk).
Place the whites on a cutting board and coarsely chop. 
Place the yolks in a bowl and mash with the back of a spoon.
Toss the crumbled bacon, diced onion, and chopped jalapeno on top of the egg whites. Mix the ingredients together to make an evenly chopped mix.
Add the mayo, mustard, vinegar, lemon juice, salt, and pepper to the yolks and mash/stir until smooth.
Add the egg white blend to the yolk blend bowl and stir to mix everything nicely.
To make the sandwiches, pile shredded iceberg lettuce on the bottom sandwich slice. 
Spoon a heap of egg salad on top.
Top with sliced avocado, tomatoes, and potato chips!!!

How to "Hard-Boil" Eggs





If RANDOMLY you should ever need to hard-boil eggs, (and with easter just a week away..) here is the easiest way to do so. 


Level: So n00b it hurts
Duration: 10-20 minutes


The Goods:

Eggs
Water
Saucepan


Tutorial:

Place eggs in saucepan

Do not layer the eggs, only put enough that the saucepan can hold (one layer)
Add cold water to cover eggs at 1 inch.
Heat over high heat just to boiling.
Remove from burner.
Cover pan.
Let eggs sit in hot water for about 12 minutes for large eggs (9 minutes for medium eggs; 15 minutes for extra large).
Drain immediately after time is up and serve warm.
OR
Cool completely under cold running water or in bowl of ice water, then REFRIGERATE.

Hard boiled eggs kept in refrigerator with shells INTACT can last up to a week.

These are great healthy snack alternatives, and are good for when your broke and need to fill your tummy.

Fallout Inspired: Radiated Soup

Its been awhile my fellow gamers… and I have missed you all! 

I wanted to share a very favorite recipe of mine that I hope you will enjoy.

It is a recipe that has been in my family for a very very  long time. I love it, many others love it too and ask how to make it. 

I want to share it as 

Fallout: RADIATED SOUP






The Goods

27oz of Baby Spinach (it may seem like a ton, but spinach shrinks when you cook it)
32oz (4cups) of Chicken Stock 
16oz (2cups) of Milk
16oz (2cups) Water
1 onion
7 eggs
Salt to taste
Pepper to taste
Olive Oil


Tutorial

Grab large spoon pot (Cauldron hehehe)
Chop onions coarsely. 
Drizzle about a tablespoon or two into the pot.
Turn on heat to medium-high, to start warming up the oil.
Once oil is hot, add onions.
Stir onions occasionally to make sure they do not stick to the bottom of the pot. 
Add about two pinches of salt. 
Stir onions until transparent and soft.
Add both chicken stock, milk, and water.
Bring to a boil.
Once boiling, Lower the heat to medium - low (otherwise the milk will make the soup boil over)
Gradually add the spinach. (you will need to let some spinach shrink before adding more)
Be sure to use all of the spinach.

Here comes the tricky part..

Once all spinach is added and stirred around the pot, continue to let the soup simmer.
Crack the eggs and drop the eggs in sparse places of the soup (I like dropping them in a circle and the rest in the middle)
DO NOT STIR!
I repeat DO NOT STIR
Let the soup cook the eggs, stirring the soup will mess up the eggs.
cook/simmer for about 10 minutes then STIR VERY GENTLY AND SLOWLY.
Turn off heat and let soup cool before serving.
Add salt and pepper to taste.

Serve into bowls, make sure you get an egg or two in there.
**Add some hot sauce if you like - I like Tapatio
