Cyberpunk 2077 Yakitori

Noob Level: Easy
Duration: 1hr 25 mins total

The Goods:

- 3 cloves garlic

- 1-inch piece ginger

- 1/2 cup mirin (japanese sweet sake)

- 1/2 cup Low Sodium soy sauce or Tamari

- 1 tablespoon honey or brown sugar

- 1 bunch Green Onion

- 4 chicken thighs, boneless and skinless

- 1 tablespoon Red miso paste

- Bamboo Skewers

- Olive oil or Cooking Spray

How To:

Lets start with the Marinade:

We will peel and smash the hell out of the garlic cloves and place them in a small saucepan.
Next, Slice up unpeeled ginger into small circular like coins (about 5 slices total); add to the saucepan.

Add the mirin, low sodium soy sauce/tamari, and honey/brown sugar to the saucepan as well.

Over medium-high heat, bring that puppy to a simmer, stirring occasionally to not let the sugar/honey from burn. Allow to keep simmering for about 1 minute.

Set aside to cool.

Cut the white and light green parts of the green onion into 1-inch pieces. (Keep green stalks for garnish.)

Set aside.

Slice each chicken thigh into 4 equal/bite size pieces.

On each skewer, first coat the bamboo with olive oil (to prevent sticking), skew the chicken pieces onto the skewers, with the pattern of pieces of the green onion between the pieces of the chicken.

Place skewers on a baking sheet and pour marinade to coat them.

Marinate for at least 30 minutes (up to 3–4 hours), flipping the skewers in the marinade every 5–7 minutes.

(Note: Chicken can be marinated in refrigerator overnight.)

While the chicken marinates, preheat oven to 350 degrees F.

Heat your grill pan over high heat, 5–10 minutes. Drizzle with olive oil or Spray with cooking spray to prevent sticking.

Keeping the marinade on the side for later, place chicken skewers on the hot grill and cook for 2–3 minutes; smash down the skewers with a skillet or plate to create grill marks on the chicken.

Flip skewers and repeat for 2–3 more minutes.

Place the chicken, still in the grill pan, in the oven and bake, 10 minutes. (Please make sure your grill pan is oven safe before doing this)

Meanwhile, let's work on the GLAZE!

Pour the marinade back into a saucepan and add the miso.

Bring to a boil and slightly, about 15 minutes (this kills any bacteria from the raw chicken)

Remove grill pan from oven after 10 minutes is up and add skewers to a plate.

When the sauce has reduced, brush it over the chicken.

*OPTIONAL* Slice left over scallion greens and sprinkle over the skewers as garnish.

With news of Red Dead Redemption 2 in the works, it inspired me to create a really simple and delicious meal for one of the best games (I've played) ever.

You ready for a banging Mexican breakfast? Lemme introduce you to Red Dead - Chilequiles! Giving you a little bit of cowboy flair, south of the border!

This recipe is super easy to make and will for sure be a favorite for many any time of day.

Level: Super Noob

-Shredded Mexican Cheese
-1 small can "El Pato" hot sauce (yellow can is red hot, green can is salsa verde) you can use any kind
-2 eggs
-Sour Cream

-1 White Onion

Take about half (or a little more) of the tortillas from the package and cut them lengthwise into strips, and crosswise into little chips.

Take about 2 Tablespoons of olive oil and pour into a pan.

Turn the pan onto medium heat and place the tortilla strips into the pan and fry them until golden brown.

Remove chips and place them on a plate that is lined with a paper towel to soak up the oil.

Chop onion into cubes or strips, (you can use whole onion or half it doesn't matter) and place them in the pan, add a little drizzle of oil if needed.

Cook down the onions until soft and golden.

Add the Eggs and scramble lightly with the onions.

Add the El Pato sauce to the eggs and onions

Add the crispy tortilla chips to the salsa and egg mixture, coat the chips fully.

How to "Hard-Boil" Eggs

If RANDOMLY you should ever need to hard-boil eggs, (and with easter just a week away..) here is the easiest way to do so.

Level: So n00b it hurts
Duration: 10-20 minutes

The Goods:

Place eggs in saucepan

Do not layer the eggs, only put enough that the saucepan can hold (one layer)
Add cold water to cover eggs at 1 inch.
Heat over high heat just to boiling.
Remove from burner.
Cover pan.
Let eggs sit in hot water for about 12 minutes for large eggs (9 minutes for medium eggs; 15 minutes for extra large).
Drain immediately after time is up and serve warm.
Cool completely under cold running water or in bowl of ice water, then REFRIGERATE.

Hard boiled eggs kept in refrigerator with shells INTACT can last up to a week.

These are great healthy snack alternatives, and are good for when your broke and need to fill your tummy.
