Fallout inspired: Wasteland Nachos

The Fallout games are my all time favorites. I can't get enough of the post apocalyptic story line and themes that go along with them. All the side quests can have me playing for hours on end. Yes, it is safe to say I am addicted and I need a doctor to rid me of my "chem" addiciton. LOL

So I came up with a mouth watering recipe. It took me quite some time to come up with something FALLOUT themed. So I thought to myself, what food out there do a majority of people like? NACHOS!  So here it is, WASTELAND NACHOS. Eat as much as you want! I promise you wont get RAD poisoning, it is safe to say you can toss your RADAWAY. :-)

Cook Time: 30 Minutes

The Goods:

-2 cans refried beans
-2 bags tortilla chips (Mix n Match any kind you like)
-1 pound Ground Beef
-1 Taco seasoning packet
-3/4 cup water
-2 tablespoons butter
-2 tablespoons flour
-2 cups milk
-1 large bag (1 pound) of shredded cheese of choice
-1 jar of Pico de Gallo (Found in the fruits and veggies section of the grocery store)

Optional Toppings:
-Sour Cream
-Green Onions
-Black Olives

-Preheat oven to 375 degrees.
-Cover baking sheet with foil or wax paper - spray with nonstick cooking spray.
-Evenly arrange one layer of tortilla chips on baking sheet.
-Heat a medium cooking pan on medium heat and begin cooking your ground beef until no longer pink and is crumbled evenly.
-Add the taco seasoning packet, along with 3/4 cup water. Stir well and follow the directions on the taco packet. Cooked until the water is absorbed and beef is coated evenly.
-In a medium sauce pot, melt the 2 tablespoons butter and add the 2 tablespoons flour.
-Cook the butter and flour for 1 to 2 minutes over medium heat.
-Whisk in the milk, when starting to bubble mix in your delicious cheese with a spoon until melted.
-Remove cheese sauce from heat.
-In a separate sauce pan cook both cans of refried beans until nice and smooth.
-Layer the beans, beef and cheese sauce over the tortilla chips, add more chips and continue to layer until all ingredients are gone.
-Top off the top of the nachos with some fresh grated cheese and place in oven.
-Bake until top cheese is melted and chips are golden brown.
-Remove from oven.
-Scoop whatever amount of nachos onto a serving dish.
-Top with Pico De Gallo and other optional toppings!

It should look like nuclear fallout landed ALL OVER your tortilla chips.
